I would still prefer a gshock for its robustness and worry free affordability, but if you must wear mechanical watches, i think ISO6425 tested divers are tested not just for water resistance but also a certain level of shock resistance-which would translate to a more robust watch for your rough and tumble situations.
As a past EMS provider of over 10 years, this is the watch I used in the last portion of my career until June of 2023. I would check Orient field watches like this one and the other I used was a citizen eco drive that I no longer have.

For me it would be a Sinn, Damasko, Marathon or something of the like.
Check out the Victorinox I N O X watches. Their watches are pretty tough, and they even have a carbon model that can withstand extreme heat.

How about the Sinn EZM 7? A watch they specifically designed for firefighters
Love my Seiko GMT but no screw down crown...think for a firefighter it needs to have that and be super durable...any Marathon would be a great choice

Yes, It's been a matter of luck that it's lasted so far. I've destroyed a Seiko 5, an eco drive, and 2 gw5600s so far...
