Which would you choose, Sinn 104 or Squale 1521? I know that one is a pilot's watch and the other a diver's watch. But both appeal to me. And for now, only one of the two is an option.

This is a really really hard pick both are great. It's going to come down to personal preference, price and availability

Dislike the date on the Sinn and the lume plots on the Squale, but I dislike the Sinn the least.

I prefer Sinn here in regards to the watch and brand. Squale intrigues me with some of their models and the praise folks give, but then there has been some promotion of Squale that has always given me pause as being pushed for the wrong reasons. Conversely, Sinn gets topsarms from me across the board off what I know of the brand's history and personal experience.

Sinn is a great watch. I have owned the 104, U50 and 556. Solid watches!

Have owned five Sinn models. My kids got three, I sold the 356 because auto chrono upkeep is too costly. Bought another 556 for myself. The 556 is the gold standard GADA comparison for under $2K.

Owned one single Squale model. Root Beer diver. Tried it on, flipped it. The single most overhyped homage watch out there. They are selling $500 watches for $1500. Steinhart makes better homages for significantly less money.

Not even a close comparison.
