For real formal occasions the best option is not to wear a watch at all…you are there for something really special, you’re not going to check the time! Your host will let you know when it’s time for what. But if a watch is to be worn: leather strap. For a formal occasion, you’ll want to avoid drawing attention to your watch - anything shiny (I.e. a metal bracelet) therefore a no-go.
But in the end, it’s all about respect for the occasion and your host. If you know the groom for instance will wear his metal bracelet Rolex Explorer with his wedding suit, no problem to do so as well (try to not outdo his watch though ;)
I am of the mind to wear what I want. All my dress watches are on bracelets. I do agree with Icarium that it is about the occasion/event. Most of the time my watch is under the cuff unless I extend my arm. Could depend on the season as well, I believe the bottom line is too just be tasteful with what you wear.
Totally okay to wear a watch on any occasion, including formal. I also don't think it's improper to wear a "better" or nicer watch than your host or boss. They don't care about your watch and 9 times out of ten they won't know what watch you're wearing. I prefer leather when wearing a suit but I also wear leather straps with jeans. Ultimately it's about you and your comfort and preference.
