I have one of the cheaper GSs - the SBGA373. Which means I get all the lovely things about GS but for a more affordable price. I think the more expensive GS models ARE worth the extra, but only if you've got serious amounts of dough to splurge and a few thousand here or there isn't significant for you.
The answer in terms of "what extra do you get", is very subjective, and it might appear to be very incremental given how much extra you pay. But that's always the case with genuine luxury watches. If you really want it, it's worth it.
